Like in other pockets of high Muslim population, in Palestine, Ramzan is a time to showcase food. But the pre-dawn breakfast in Palestine is very simple and consists of boiled eggs, Labaneh (smooth yogurt) and goat cheese.
A sweetened imli or tamarind drink -- called Tamar Hindi (!) -- and infused with rose water and lemon juice is an ideal way to break a fast in the evening.
Interestingly Christian Palestinians look forward as eagerly to Ramzan too because it is a time to savour delicacies not found/cooked at other times of the year like Katayif, another version of the Iraqi Qatayef pancakes and are served with honey or syrup. An apricot based pudding called Mawardieh is equally popular.
