Of Bulanis and Samboosas in Kabul

The food of choice during Ramzan in Afghanistan is Bulani or Boulani, a more eccentric type of Samosa (incidentally Afghanis make Samosas too -- they call it Samboosa -- and Samosas came to India via the Silk Route and Afghanistan). Bulanis are a maida (white flour) pastry stuffed with potatoes and onions/leeks.
