Gujhia
March 9, 2009
Ingredients:
250 gms flour
1/2 kg mawa (dried milk)
100 ml water
250 gms sugar
1 1/2 tbsps raisins
100 gms thickly grated almonds
3 tbsps oil
Cooking oil to deep fry
Method:
Knead the flour into a dough, mixing in the 3 tbsps of oil and adding small quantities of the water. Set aside and cover with a muslin cloth.
Heat the cooking oil in a deep pan and deep-fry the mawa till lightly browned.
Add the almonds, raisins and sugar into the mawa and mix. Fry for awhile, then let it cool.
Taking small pieces of the dough, roll each into a ball, flatten and mold into little circles, like a roti. Fill half with the mawa mixture and fold over the other half, twisting the edges so that you have a stuffed semi-circle.
Using heated cooking oil, deep-fry these to a golden-brown on a low flame.
Set the gujhias on paper towels to absorb excess oil and either serve hot or store in an airtight jar.
