Ingredients:
5 ripe red tomatoes, peeled and chopped
1 cup diced onions
Half cucumber peeled and chopped
2 eggs
Half capsicum, peeled and chopped
4 tablespoons vinegar
2 cloves of garlic, finely chopped
2 tablespoons olive oil
1.5 cup water
Salt and pepper to taste
For the garnish:
Half cup of croutons
Diced capsicum and tomato for garnishing
Method:
Combine the tomatoes, cucumber and capsicum with garlic in a blender, and blend till smooth. Add the vinegar and eggs and blend well. Pour in the water, salt and pepper and chill. Garnish with croutons and chopped vegetables.
Tip: If you over-salt your soup, a peeled potato dropped in it will absorb the excess.
