Rose Walnut Milk Falooda: 10-Min Recipe

Falooda served in rose milk has a Valentine mood to it.
Boost its nutritional content by using walnut milk.
Top with chopped walnuts and rose petals and you have a celebratory drink.

Ingredients

  • ¼ cup walnuts + extra chopped for garnish
  • Water
  • 1 tsp rose syrup + 2 tbsp rose syrup
  • 2 tbsp basil seeds, presoaked

  • ¼ cup falooda sev or vermicelli
  • 2 scoops vanilla ice cream
  • Dried rose petals, for garnish

Method

  • Soak the ¼ cup walnuts overnight in 1 cup water.
  • Drain the soaked walnuts and transfer to a blender and blend into a rough crumb consistency.
    Do not over-blend, or it will become walnut butter.
    Add 1 cup water and blend for another 2 minutes until liquid is creamy and milky looking.
    Add 1 tsp of the rose syrup, and blend again.

  • Refrigerate till ready to use.
  • Bring the 3 cups water to boil in a saucepan over medium heat and cook the falooda sev as per the package instructions; hardly a minute or two.
    Don't overcook or the falooda will become mushy.
    Drain through a colander and rinse with cold water and keep aside.
  • Add the remaining 1-2 tbsp rose syrup at the bottom of 2 glasses.

  • Add 1 tbsp soaked basil seeds to each glass.
  • Add a layer of all the cooked falooda sev to each glass.
  • Sprinkle some of the chopped walnuts on top in each glass.

  • Divide the chilled rose walnut milk between both glasses.
    Top with a scoop of vanilla ice cream in each glass.
    Garnish with rose petals and the remaining chopped walnuts.
  • Serve immediately; serves 2.

Tips
If rose syrup is not your fave, use any fruit crush or syrup, like strawberry, raspberry etc.
In addition to basil seeds, add soaked chia seeds for extra goodness.
Garnish with other chopped nuts or dried fruit in addition to walnuts.
