Mini Bread Quiche: 20-Min Recipe

Chef Kunal Kapoor has a quick snack solution for something to munch on in front of the television as you watch your new season of a favourite series.
Baked in a muffin tray, these dainty, cute quiches have a crispy bread crust and are filled with a bewitching cheesy mixture.

Ingredients

  • 4 slices bread
  • 1 egg, whisked
  • ½ cup milk
  • 1 cup grated cheese

  • Salt to taste, about a pinch since the cheese is salty too
  • Pinch black pepper powder
  • 1 sprig fresh thyme

  • ½ cup chopped red, green, yellow bell peppers or capsicum
  • ¼ cup chopped baby corn
  • A muffin tray

Method

  • Cut the crusts off the bread and discard.
    Using a rolling pin, slightly flatten the de-crusted soft bread.
  • Line 4 muffin moulds, with each of the slices of flattened bread, pushing the bread to the corners of the mould.

  • Place these moulds in a preheated oven for 2 minutes at 180 °C.
    Take out of the oven and keep aside.
  • In a bowl, mix together the milk, egg, cheese, thyme, pepper, salt, chopped bell peppers, baby corn.

  • Using a tbsp divide the mixture between each of the bread cups.
    In a preheated oven, now bake the filled bread cups or mini quiches at 180°C for about 12 minutes.
  • Take out of the oven and serve piping hot; Makes 4 portions.

Tips
Spice up the cheesy-veggie mixture with a dash of Tabasco and/or paprika and/or chilly flakes and/or 2 tbsp chopped fresh parsley.
You don't have to stick only with capsicum and baby corn.
Use finely-chopped mushroom instead of capsicum or mix in mushrooms.
Or chopped boiled potatoes. Or chopped steamed asparagus or broccoli. Or chopped spinach or finely chopped carrots.
The quiche can contain a medley of vegetables.
Meat lovers might like to add bits of fried bacon, chopped boiled chicken or chopped fried sausages.
