Green Tomato-Chilly Sabzi: 30-Min Recipe

Jayanti Soni's wonderful Green Tomato-Chilly Sabzi is made from unripe tomatoes, large green Bhavnagiri chillies and a bouquet of mixed spices.
Says Jayanti, "This dish is relatively low in calories, making it a healthy option for those watching their weight."

Green tomatoes are packed with vitamins A, C, essential for immune function, skin health.
They also contain potassium, which helps regulates blood pressure, says Healthline.

Ingredients

  • 4-5 medium-sized green tomatoes
  • 3-4 large green chillies/peppers, called Bhavnagiri mirchi
  • 4-5 pods garlic
  • 1-inch piece ginger
  • 1 tbsp mustard oil
  • ½ tsp sonf or fennel seeds
  • ½ tsp kalonji or nigella seeds

Ingredients, continued 

  • ¼ tsp jeera or cumin seeds
  • ¼ tsp rai or mustard seeds
  • ½ tsp lightly pounded methi or fenugreek
  • 2 pinches hing or asafoetida
  • ½ tsp brown dhaniya or coriander powder
  • ¼ tsp haldi or turmeric:
  • ½ tsp red chilly powder
  • Salt  to taste, about 1 tsp

Method

  • Crush the dry fenugreek seeds; reduces bitterness.
  • Cut the ginger, garlic into long pieces.
    Cut the tomatoes, green chillies into 1 cm pieces.
    Heat the mustard oil in a saucepan or a kadhai and add the cumin seeds, asafoetida, nigella seeds.

  • Then add the fennel seeds, followed by the ginger, garlic.
    Cook for 20 seconds.
    Add the green chillies & cook for another 20 seconds.
    Add the tomatoes, mix well.

  • Add the salt, turmeric, coriander powder, crushed mustard seeds, red chilly powder.
    Mix thoroughly.
    Cook for 20 seconds more and take off heat.
  • Be careful to not overcook the tomatoes; they should not become too soft.
  • Serve hot with chapatis or parathas.

Tips

This vegetable preparation or sabzi goes well with rice and a pulau too.
Choose small green tomatoes that are firm and just about to turn red.
