Garlic Mung Sprouts: 10-Min Recipe

If you are tired of eating the cucumber-tomato-carrot combo, here's hope: A green mung sprouts salad, flavoured with garlic, mayonnaise and more, courtesy Kanchan Maslekar.

Ingredients

  • 1/3 cup green mung sprouts
  • 1 tsp extra virgin olive oil
  • 2 tsp finely chopped garlic
  • ½ cup diced tomatoes

  • 1 cup torn iceberg lettuce leaves
  • 5-6 chopped mixed salad leaves
  • 2 tsp lime juice
  • ½ tsp freshly ground white pepper
  • 2 tsp mayonnaise

Method

  • In a frying pan, over low heat, saute the green sprouts in the oil and the garlic for not even a minute.
    Keep aside to cool.

  • In a large bowl, toss together the iceberg lettuce, salad leaves, tomatoes, sprouts.
    Add the mayonnaise, salt, white pepper powder, lime juice, mix and serve; serves 2-3.

Tips
Skip the mayonnaise and consider serving the salad in tart shell, as a healthy cocktail snack, with a sprinkling of nylon sev and a dot of green dhania-mint chutney.
Or add more vegetables to the salad like olives, alfalfa sprouts, small pieces mulee or red radish, Shimla mirchi (capsicum), cucumber.
