Reader Aanchal Barua shares with us two quick and easy to make breakfast recipes -- vegetable uttappa and seasoned bred with mint and garlic dip.

Vegetable Uttappa

Ingredients

  • 3-4 tbsp oil
  • 1 cup suji (rawa)
  • 1/2 cup curd
  • 1/2 cup milk
  • Chopped vegetables of your choice
  • Salt taste
  • Eno

Method

  • Mix suji, curd and milk to create a batter easy enough to pour on the pan. Add more milk if you want to smooth out the batter.
  • Add salt and eno.
  • Heat the pan and add oil ensuring that the entire circumference of the pan has been greased with oil.
  • Spread the batter in circular motion and quickly add the finely chopped veggies. Once the base turns golden brown, flip and cook the other side.
  • Serve hot with green or coconut chutney.

Seasoned bread along with garlic, mint and yoghurt dip


Ingredients

  • Brown/multi-grain bread
  • Chilli flakes -- 1-2 tsp
  • Pepper as per taste
  • Basil -- 1 tsp
  • Salt as per taste
  • Butter -- 1 tbsp
  • Yoghurt -- 200 gm
  • 1/4th cup mint leaves, washed and chopped
  • 4 to 6 cloves of garlic

For the dip

  • Whip the yoghurt into a thick smooth paste.
  • Add finely chopped mint, pepper and crushed garlic.

For the bread

  • Apply butter and toast the bread on a pan or tawa as per your liking.
  • Once done, season them with salt, crushed pepper, chilli flakes and basil.
