Feta Watermelon Salad: 10-Min Recipe

A fresh salad that pairs watermelon with feta cheese is one of those classic contrasting sweet-salty delightful combos.
Harnoor Channi-Tiwary declares her recipe is simple to toss and scrumptious to eat.
The Greek salad may become a regular on your dining table this summer, especially since watermelon is 92% water.

Ingredients

  • 500 gm watermelon, chilled
  • 50 gm feta cheese, crumbled

  • 1 tbsp extra virgin olive oil
  • ½ an onion
  • Juice of 2 limes, chilled

  • 8-10 mint leaves
  • 8 pine nuts, chopped

Method

  • Slice the onion into thin half moons.
    In a small bowl, soak the slices in the lime juice for half an hour.
  • Remove the pips from the watermelon as you cut into bite-size pieces.

  • In a bowl, add crumbled feta cheese and the onions with the soaking juice.
    Roughly tear the mint leaves and add to the bowl.

  • Drizzle the olive oil over the salad and add in the chopped pine nuts.
    Very lightly toss the salad with your fingers so as not to further break the cheese.
  • Serve immediately, should be chilled; Serves 3-4.

Tips
Instead of mint leaves use basil leaves or use both.
For a more interesting presentation, use yellow watermelon pieces too.
Consider adding sliced black olives and a few pieces cucumber. Maybe cherry tomatoes as well.
In addition to pine nuts, or instead of, add chopped walnuts.
