This hearty soup is perfect for a chilly winter night.
Lauki Soup
Ingredients
- 1.5 pieces of lauki
- 3 cups of water
- 2 tsp butter
- 1/2 tsp ginger and chilli paste
- 1 cup milk
- Salt to taste
- 1 tsp black pepper
- Coriander leaves for garnishing
Method
- Boil lauki in the cooker for 5 whistles.
Blend it into a paste and strain. - Heat 2 tsp butter in a pan.
Add 1/2 tsp ginger and chilli paste.
Add 1 tsp beans, carrot and baby corn.
Cook till it gets soft. - Add lauki paste in the pan.
Add salt to taste and 1 tsp black pepper powder.
Add 1 cup milk and cook till the soup boils.
Garnish with coriander leaves and serve.
