Summer coolers: Carrot Milkshake and more

We invited Get Ahead readers to share their summer recipes with us -- light, easy to digest preparations that have a cooling effect in the sweltering heat. As part of an ongoing series, we present three cool summer drinks from readers.

First up is a recipe for Lassi from Vilas:

Cuisine: Punjabi

Type: Vegetarian

Preparation time: 10 minutes

Ingredients:

  • 1 cup curd
  • 1/2 cup water
  • 3-4 tsps of sugar
  • A few drops of rose essence
  • A pinch of salt

Preparation:

  • Mix all the ingredients in a mixer till well-blended.
  • Serve chilled.

Next we have Satya's Green Buttermilk preparation:

Cuisine: Andhra

Type: Vegetarian

Preparation time: 5 minutes

Ingredients:

  • 2 cups fresh curd
  • A few pudina leaves
  • A few coriander leaves
  • A few curry leaves.
  • Jeera powder,
  • An inch of ginger
  • Salt to taste

Preparation:

  • Wash all the leaves and ginger with water.
  • Blend them; add curd, salt and jeera powder and blend again again.
  • Filter the buttermilk to separate the pulp and serve.

And here is a unique Carrot Milkshake recipe from Swapna Veldanda:

Cuisine: Andhra

Type: Vegetarian

Preparation time: 10 minutes

Ingredients:

  • 5 carrots
  • 1/2 litre milk
  • 25 gms cashew nuts
  • 4 pods of cardamom
  • A few powdered pistachios
  • 4 tbsps sugar

Preparation:

  • Boil carrots; grind into a pulp and set aside.
  • Mix the milk with the rest of the ingredients and then add in the carrot mix.
  • Refrigerate and serve chilled.
