Peas and Capsicum soup

Ingredients:

Half cup fresh peas
3 chopped capsicums
1 onion, chopped finely
1 teaspoon white vinegar
2 tablespoons cream
1 cup chicken stock
2 tablespoons Quaker oats
1 cup milk
1 tablespoon butter
Salt and pepper as per taste

Method:

Heat the butter, add the Quaker oats and cook for a few minutes. Add the chopped onion and cook till the pieces become soft. Add the peas and capsicum and cook till the vegetables are soft. Add the chicken stock and bring it to a boil. Allow it to cool and liquidize it in a mixer/ blender. Heat it again and add the milk, salt and pepper. Pour the cream over the soup at the time of serving.

Tip: To give a slight cheese flavour to your soup, toss in hardened cheese rinds to enhance the stock.
