Sankranti Gur Makhana Laddus: 15-Min Recipe

Frightfully cold days call for sweet, nutritious snacks, that will digest faster. Your body needs to produce heat swiftly, burning calories quicker. This sweet is perfect for Lohri and Makar Sankranti celebrations.

Chef Kunal Kapur's recipe for these delicious laddus have makhana (fox nuts) and jaggery as their main ingredients.

Gur Makhana Laddus: Ingredients

  • 100 gm makhana or fox nuts
  • ¾ cup cashews & almonds, each
  • 1 tbsp sonf or fennel seeds & 2 tsp sonth or dry ginger powder
  • 5-6 green elaichi or cardamom & ½ tsp bara or kala elaichi or black cardamom seeds
  • 2 tbsp til or sesame seeds
  • ½ cup desiccated coconut & handful raisins
  • 2¼ tbsp oil
  • Jaggery syrup made from 1½ cups jaggery and ½ cup water

Method

  • Dry roast the makhana in a deep-bottomed pan but don’t allow it to brown.
    Cool and grind.
  • In the same pan, dry roast almonds, cashews, black cardamom seeds, sesame seeds, fennel seeds, green cardamom.
    Grind.
    Mix in desiccated coconut and the raisins.
    Keep aside.

  • Heat the oil and add the makhana and roast a little and then add the nuts-raisin mixture.
    Roast till fragrant and add the jaggery syrup.
  • Cool the mixture and shape into laddus.
  • Serves: 8
