Paneer Peppers Salad: 10-Min Recipe

Plenty of sweet peppers are available this season.
Deepa Mehrotra combines them with paneer and air-fryer grilled zucchini & broccoli for a delicious salad.

Ingredients

  • 200 gm broccoli florets, blanched
  • 1 zucchini, chopped into sticks
  • 150 gm sweet peppers
  • 200 gm paneer, homemade preferably
  • Pinch mixed dried herbs

  • Dash black pepper powder
  • Few pinches salt
  • 1 tbsp extra virgin olive oil + dash extra for grilling broccoli & zucchini
  • ½ tbsp Balsamic vinegar
  • Few pinches tajin, a Mexican spice or alternately Middle Eastern spice sumac

Method

  • Grill the blanched broccoli & zucchini in an air-fryer for 5-8 minutes with a dash of oil.
  • Plate the grilled broccoli, zucchini, peppers.
    Arrange the paneer around it and season with the pepper, salt, herbs, spice/s of choice.
    Drizzle the olive oil, vinegar atop; serves 2.

Tips
Pairs well with steamed basmati rice, noodles/pasta.
Or have atop a thick slice of sourdough, with desi ghee or extra virgin olive oil and a little balsamic vinegar.
Else have as a salad with a bowl of soup/sandwich on the side.
