Amy Shroff shares her family's falooda recipe to bring in the Parsi New Year.
The vernal equinox is the New Year for Zoroastrian Parsis.
The year is the start of the natural year; it was initiated by an ancient King Jamshed, the Law giver.
The year starts with spring and is brought in with coloured eggs, wheat grass, falooda, daal ni pori, and many other wonderful goodies.
Here is a recipe for the falooda:
Serves 12
Ingredients:
- 1/4 cup Tukmariya (sabja) seeds, allowed to soak in 4 cups water for a few hours and leave in the fridge.
- 250 gms Wheat Milk Powder (gehun nu doodh/ nishashtah) dissolved in 2 cups of water
- 10 glasses Milk
- 1 family pack vanilla/strawberry/mango ice cream
- 1/2 cup Rose Water
- 1 bottle Rose Syrup
- 2 cups Sugar
- 2kgs ice in a large vessel with colander on top
Method:
- In a large vessel, dissolve powdered wheat milk in 2 cups of water, 1/2 cup Sugar, 1/2 cup rose water
- Place over a medium flame, stirring non-stop till you get a tick gel.
- (Cook for about 1/2 hr)
- As soon as thick wheat milk paste is ready, pour it into the colander over the ice, stir quickly so that white noodles are formed, let them be in the ice-water and save in the frig immediately.
- Else it will become a soggy mess
- In a large vessel, pour in the milk.
- Add sugar and place over medium heat.
- Keep stirring till milk thickens in about 20 minutes.
- Cool and refrigerate till ready to serve.
To Serve:
- In each of the 12 glasses:
- 1 tbsp soaked, swollen tukmaria seeds
- 1 tbsp wheat milk strands over seeds
- 1 inch of Rose Syrup
- Sweetened milk till 3/4 glass is full
- Top with a scoop of ice cream
Serve immediately.
