2019 brings with it new food trends and among them is the raw salmon lollipop.
We first stumbled upon this dish on chef Piers Dawson's Instagram feed and since then it's been trending on Instagram.
'Throwback to Charlie's Asian Kitchen Pop-up,' the chef captioned the pic, above.
Commenting about the ingredients that went into making the lollipop, he added: 'Citrus and star anise cured and raw salmon lollipop, avocado puree, wasabi aioli, salmon keta, puffed wild rice and wasabi pea granola, dill.'
Calling it 'gastro art', the chef has tagged it as 'Insta good' and 'delicious'.
