Ingredients
- 100 gm watermelon
- 30 gm pomegranate pearls
- 40 gm quinoa
- 40 gm arugula
- 10 gm parsley
- 20 gm feta cheese
For dressing
- 40 ml plum sauce
- 10 ml lemon juice
- 50 gm coriander, root chopped
- 20 gm light soy sauce
- 2 gm black pepper, crushed
Method
- Cut watermelon into hearts using a cutter.
- Prepare the dressing by mixing all ingredients. Mix pomegranate, quinoa and parsley along with dressing.
- Grill the watermelon hearts.
- Place the quinoa mix on plate along with arugula. Place grilled watermelon on top of quinoa. Garnish with crumbled feta cheese and serve.
