Here's how to make Pineapple Pachadi:
Ingredients
- 300 gm pineapple diced 1/2 inch
- 50 gm jaggery or sugar
- 1 cup grated coconut
- 1/2 tsp mustard seeds
- 6 green chillies
- 1/2 cup yoghurt
- 8 to 10 black grapes (optional)
For tempering
- 1/2 tsp mustard seeds
- 1 tsp coconut oil
- 2 to 3 dry red chillies
Method
- Cook pineapple, jaggery in 1/4th cup of water for 2 to 3 minutes on low flame till pineapple turns tender.
- Grind coconut, mustard seeds, green chillies and yogurt into a fine paste.
- Add this paste to the cooked pineapple mixture.
- In a tempering pan, heat coconut oil and add mustard seeds. After they splutter, add dry red chillies.
- Pour this over the Pineapple Pachadi and mix well.
- You may also garnish with black grapes or chopped fruits of your choice.
- Serve hot or cold with steamed rice or roti.
