Onam recipe: Pineapple Pachadi

Here's how to make Pineapple Pachadi:

Pineapple Pachhadi

Ingredients

  • 300 gm pineapple diced 1/2 inch
  • 50 gm jaggery or sugar
  • 1 cup grated coconut
  • 1/2 tsp mustard seeds
  • 6 green chillies
  • 1/2 cup yoghurt
  • 8 to 10 black grapes (optional)

For tempering

  • 1/2 tsp mustard seeds
  • 1 tsp coconut oil
  • 2 to 3 dry red chillies

Method

  • Cook pineapple, jaggery in 1/4th cup of water for 2 to 3 minutes on low flame till pineapple turns tender.
  • Grind coconut, mustard seeds, green chillies and yogurt into a fine paste.
  • Add this paste to the cooked pineapple mixture.
  • In a tempering pan, heat coconut oil and add mustard seeds. After they splutter, add dry red chillies.
  • Pour this over the Pineapple Pachadi and mix well.
  • You may also garnish with black grapes or chopped fruits of your choice.
  • Serve hot or cold with steamed rice or roti.
