Yesterday we brought you this recipe for Cheesy Pesto Rice Patty courtesy MasterChef India 4 contestants, Pratibha Kochar and Bhakti Arora.
Today we bring you the recipe for:
Soft Mexican Tacos
Ingredients:
For the tortilla:
- 1 cup refined flour (maida)
- 1/4 cup rice flour (chawal ka atta)
- 3 tbsp oil
- 1 tsp red chilli powder
- Salth to taste
- Water, to knead the dough
For the refried beans:
- 1 cup kidney beans (rajma), boiled
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 3 cloves garlic, finely chopped
- 1/2 tsp cumin (jeera) powder
- 1 tsp all spice powder
- 1/2 tsp oregano
- 1 tsp red chilli powder
- A handful coriander (dhaniya), freshly chopped
- Salt to taste
- 2 tbsp oil
For the cheesy sauce:
- 1/2 cup fresh cream
- 1/2 cup processed cheese, grated
- Salt to taste
For the fruit salsa:
- 1 cup fresh pineapple, finely chopped
- 1/2 cup green apple, finely chopped
- 2 red plums, finely chopped
- 1/4 cup red bell pepper, finely chopped
- 1/4 cup coriander, freshly chopped
- 1 tsp red chilli powder
- Salt to taste
For the garnishing:
- A few spring onion greens
Method:
For the tortilla:
- Mix all the ingredients in a bowl and knead them it into a tight dough.
- Roll out small portions of the dough into small round rotis / tortillas.
- Heat a griddle and cook the tortilla from both the sides.
- Use this for assembling the soft tacos
For the refried beans:
- Heat the oil in a pan, add the chopped garlic, and sauté for a minute.
- Then, add the onions. Saute the onions till translucent. Then add the tomato and let it cook for another 10 – 15 minutes. Keep stirring occasionally.
- Now add the all spice powder, cumin powder, red chilli powder, oregano & salt to taste
- Mix well and cook for a few minutes.
- Now add the boiled kidney beans &freshly chopped coriander and mix well.
For the cheesy sauce:
- Heat the cream in a pan, and when it starts to bubble from the sides, add the grated cheese. Mix well till the cheese melts.
- Now add the salt. The sauce is ready.
For the fruit salsa:
- Mix all the ingredients in a bowl. And the fruit salsa is ready.
Assembly:
- Take the tortilla, and place the refried beans filling in the center of it. Pour some cheese sauce.
- Fold the tortilla into half. Now top it with some fruit salsa & cheese sauce.
- Garnish with some chopped spring onion greens.
