Simple breakfast recipes to power up your day!

It doesn't take a lot to toss up these breakfast dishes. Try them out! Kanchan Maslekar lists out some:
Have breakfast like a king, lunch like a prince and dine like a pauper -- goes the old saying, indicating the importance of breakfast. But with changing lifestyles there is little time to cook an elaborate breakfast. Here are a few easy but filling and healthy breakfast recipes:
Power Poha
Ingredients
- 2 cup poha
- 1 cup soaked gram dal
- 1/2 cup soaked soya chunks
- 4 tbsp roasted peanuts
- 2 chopped onions, chopped
- 1 tsp mustard seeds
- 10-12 curry leaves
- 2 tsp finely chopped green chilies
- 2 tsp finely chopped garlic
- 2 tbsp lemon juice
- 1 1/2 tsp turmeric powder
- 2 tbsp oil
- 2 tbsp chopped coriander
- Salt to taste
Method
- Soak the Poha in the water and drain the excess water by pressing them with both your hands. Leave aside.
- Heat oil in a wok. Add mustard seeds, curry leaves, green chilies and garlic and stir fry.
- Now add onions, and saute for 2 minutes .Add turmeric powder and salt and saute for 1 minute. Now add the dal, soaked soya chunks, roasted peanuts and cook for 2 minutes.
- Add the soaked poha. Stir and mix well all the ingredients. Cover and cook for another four minutes.
- Serve hot.

Veggie Rice Pancakes
Ingredients
- 2 cups cooked rice (You can also use leftover rice)
- 1/4 cup grated carrot
- 1/4 cup sweet corn kernels
- 1/4 cup chopped spring onions
- 1/4 cup shredded cabbage
- 2 green chilies, finely chopped
- 2 tbsp curds
- 2 tbsp chopped coriander
- 1/2 cup wheat flour
- 1/2 cup gram flour
- 1/2 tsp asafetida
- 5 tsp oil to cook
- Salt to taste
Method
- Combine the rice, vegetables, flour and spices in a mixing bowl.
- Add water if required and mix well to form a soft dough.
- Make small pancakes or cutlets using wet hands. Ensure that the cakes are not too thick.
- Heat the oil in a frying pan and shallow fry the pancakes.
- Cook on both sides till golden brown using a little oil. Serve hot with green chutney, tamarind chutney or tomato ketchup.

Oats Khichadi
Ingredients
- 2 cups Oats
- 1/4 cup green moong sprouts
- 3/4 cup boiled carrots, French beans and peas, cauliflower
- 1 chopped onion
- 1/2 tsp Mustard seeds
- 1/2 tsp cumin seeds
- 3-4 finely chopped green chilies
- 1/4 tsp Turmeric powder
- 6-7 curry leaves
- 3 cups water
- 2 tbsp Oil
- 4 sprigs of mint to garnish
- 4 tsp ghee
- Salt to taste
Method
- Heat oil in a pressure cooker.
- Add cumin seeds and mustard seeds and allow them to crackle for 30 seconds.
- Add curry leaves, turmeric powder and onions and green chillies and cook till onions become translucent.
- Add sprouts and cook for another minute. Add mixed vegetables, and mix and cook for two minutes.
- Add Oats and water in the cooker and cover it. After one whistle remove from fire.
- Garnish with a sprig of mint and chopped coriander and serve hot.
Thalipeeth (with Veggies and Tofu)

Ingredients
- 1/2 cup jowar flour
- 1/2 cup rice flour
- 1/2 cup whole wheat flour
- 1/2 cup millet flour
- 1/4 cup gram flour
- 2 tbsp semolina ( A readymade dry mixture of these flour is also available in the market with the seasoning)
- 2 chopped onion
- 1/2 cup shredded cabbage
- 1/4 grated carrot
- 1/4 cup chopped spring onions
- 1/4 cup grated tofu, onion, chopped, 2 tbsp chopped coriander
- 1 tsps chilli powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 cup water
- Salt to taste
Method
- Take a big bowl and combine all the flour and vegetables. Now add chilli powder, cumin and coriander powder. Add onions coriander, vegetables, Tofu . Add salt and semolina and mix well.
- Add some water and knead into soft dough. Rest the dough for 20 minutes.
- On a greased plastic sheet take a small portion of the dough and flatten it with your hand. Heat oil in a pan and gently transfer the thalipeeth from the plastic transfer into the pan.
- Make little holes on the thalipeeth and pour some drops of oil on it. Cook on both sides.
- Serve hot with white butter or yogurt.
Spicy Spinach omelette

Ingredients
- 2 eggs
- 1 tsps grated parmesan cheese
- 1 cup spinach leaves
- 1/4 tsp grated onions
- 1 finely chopped chilli
- A pinch of nutmeg powder
- Salt and pepper to taste
Method
- Beat the egg whites and stir in the baby spinach, parmesan cheese and green chilly. Add the onion powder, nutmeg, salt and pepper.
- On a non stick pan cook the egg for three minutes until partially set. Flip with a spatula and continue the other side.
- Serve hot. (You can also add vegetables of our choice to the omelettes in addition to the spinach)
