One of the staple diets in homes across the country is the ever popular dal -- could be moong, masoor, tur, or any variety grown locally.
However, we often end up with a lot of leftover dal. We bring you 5 easy ways to use yesterday’s high protein leftover.
Depending on the consistency of the leftover dal and its seasoning, you may alter the proportion and spices used in the following recipes:
Porridge with Boiled Eggs
Ingredients
- 2 cup left over dal
- 1 chopped onion
- 1/4 tsp mustard and cumin seeds, a pinch of asafetida
- 1/4 tsp turmeric powder
- 1 tsp oil
- 1 tsp ginger garlic paste
- 1 tsp tamarind pulp
- 3/4 spoon jaggery
- 2 boiled eggs
- Salt to taste
For the dough
- 1 cup wheat flour
- 1 tsp chilli powder
- A pinch of salt
- Water as required
Method
- Knead the wheat flour, salt, red chilli powder into a soft dough. Set aside.
- Heat oil in a pan. Add cumin seeds, mustard seeds, asafetida and turmeric powder.
- Add chopped onions and fry till golden brown.
- Add leftover dal, jaggery, tamarind and salt and boil for five minutes.
- Roll the dough into a thick roti and cut into small diamond shape.
- Add the rolled and cut pieces to it, add boiled eggs and cook on medium heat till the roti pieces are cooked.
- Simmer for five minutes.
- Garnish with coriander leaves and serve hot.

Palak Thalipeet

Palak Thalipeet (Pancake)
Ingredients
- 1 cup left over dal
- 1/2 cup rice flour
- 1/2 cup gram flour
- 1 cup finely chopped spinach leaves (palak)
- 1 tsp ginger garlic paste
- 1 tsp cumin seeds
- 1 tsp oil
- Salt to taste
- Chilli powder
Method
- Mix palak, left over dal, rice flour and gram flour well.
- Add cumin seeds, ginger garlic paste, chilly powder and salt. Knead them to make a dough; add water if required.
- Spread a layer of the dough to make a thin pancake.
- Cook them from both sides on a non stick pan till golden brown. Add a teaspoon of oil while cooking.
- You can also replace spinach with veggies of your choice like grated carrot, cabbage, radish, methi etc.
- Serve hot with pickle, green chutney or curd.
Cutlet

Cutlet
Ingredients
- 2 cups leftover dal
- 1/2 cup grated carrot
- 1 boiled and mashed potato
- 1/2 cup grated beetroot
- 1/2 cup sweet corn
- 1 cup breadcrumbs
- 1 tsp ginger garlic paste
- 2 tsp oil
- 1 tsp chilli powder
- Salt to taste
Method
- In a large bowl, add carrot, potato, beetroot and sweet corn.
- Add the dal, cumin seeds, ginger garlic paste, chilli powder and salt.
- Make small flat cutlets and roll them on the bread crumbs just before frying.
- Deep fry the cutlets and seve hot with tamarind or green chilli chutney.
Chicken Curry

Chicken Curry
Ingredients
- 1/4 cup boneless chicken
- 1 cup leftover dal
- 1 finely chopped onion
- 1/2 tsp cumin seeds
- 1/2 tsp garam masala
- 1 tsp coriander seeds
- 1 tsp chilli powder
- 2 tsp tomato puree
- 1 tsp curd or cream
- 1 tsp ginger garlic paste
- 1/4 cup chopped coriander
- 1 tsp butter, salt to taste
Method
- Melt butter in a frying pan and add ginger garlic paste.
- Add the chopped onions and coriander seeds and saute a bit before adding the chicken.
- Add pieces of chicken and fry for 10 minutes.
- Add tomato puree.
- Cover and cook for few minutes.
- Add leftover dal, whipped curd, chilli and garam masala.
- Add water and salt. Cook for ten minutes.
- Garnish with coriander and sever with rice or paratha.
Dal Pav Bhaji

Dal Pav Bhaji
Ingredients
- 1 1/2 cups left over dal
- 2 potatoes
- 1/4 cup boiled peas, cauliflower, carrots, french beans each
- 1 large capsicum
- 1 large finely chopped onion
- 1 tsp tomato puree
- 1 tsp oil
- 1 1/2 tsp of pav bhaji masala
- 1 tsp ginger garlic paste
- 1/2 cup finely chopped coriander
- Chilli powder and salt to taste
Method
- Boil all the vegetables and set aside.
- Heat oil in a pan, add ginger garlic paste and saute.
- Add chopped onion and tomato puree.
- Add pav bhaji masala and cook it well. Add some water if required.
- Mash the boiled vegetables and add it to the masala.
- Add the dal and mix in well.
- Add chilli powder and salt to taste.
- Garnish with coriander and serve hot with bread or pav.
