Almond Orange Cake

Ingredients
For orange puree
- 2 orange malta (medium size)
For cake batter
- 225 gm castor sugar
- 20 gm honey
- 300 gm almond flour
- 6 eggs
- A pinch of salt
For sugar syrup
- 100 gm sugar
- 100 ml water
- 1 rosemary sprig
- Juice of 1 lemon
- Juice of half orange
Method
For sugar syrup
- Heat all the ingredients and cook till you reach 1 string consistency.
For the orange puree
- Pierce the oranges with a knife.
- Blanch them in water 5 to 6 times.
- Simmer the oranges in sugar syrup for about 2 hours
- Remove from heat and allow it to cool.
- Once cooled, grind into a paste.
For the cake batter
- Whip the eggs and sugar till they are light and fluffy.
- Whisk in the honey.
- Mix in the orange puree.
- Fold in the almond powder and salt.
- Pour into the mould and bake at 160°C for 20 minutes or till they turn golden brown
- Remove from the oven and soak in sugar syrup.
- Let it cool.
- Garnish with fresh oranges slice and serve.
