Monsoon recipes: Bajriche Vade & American Chopsuey

We invited Get Ahead readers to share rainy-day recipes with us -- pakoras, samosas and every other kind of tasty preparation that has you smacking your lips during the monsoons. We've been flooded with responses and as part of an ongoing series, present three recipes that you can make the most of this season.

Jayashri Lonsane sends in this recipe for Bajriche Vade:

Next is Shrija Venugopal's recipe for Palak Paratha:

Ingredients:

  • 1 bunch palak (spinach)
  • 2 cups wheat flour
  • 1 tsp garlic paste
  • 1 tsp ginger paste
  • 1 tsp Garam Masala
  • 1 tsp ajwain (carom seeds)
  • Salt to taste
  • Ghee, for frying

Method of preparation:

  • Grind the palak in the mixer.
  • Add the puree to the wheat flour with the rest of the ingredients.
  • Make parathas applying ghee on a pan.
  • The parathas will be green in colour.

Anagha Gade send in her recipe for American Veg Chopsuey:

Ingredients:

  • 3 tsp oil
  • 2 cups tomato puree
  • 1/2 tsp ginger paste
  • 1/2 tsp garlic paste
  • 1/4 tsp ajinomoto
  • 1 tsp soya sauce
  • 2 tsp corn flour (optional)
  • 1 tsp red chilly paste
  • 1 tsp vinegar
  • 1 tsp sugar
  • Salt to taste
  • 1/4 cup onion
  • 1/4 cup capsicum 
  • 1/4 cup tomato 
  • 1/4 cup baby corn (boiled)
  • 2 cups egg noodles (boiled and fried)

Method of preparation:

  • Heat oil in a pan and add ginger, garlic paste.
  • Add red chilly paste and pour in tomato puree.
  • Boil for five minutes.
  • Add Soya sauce, vinegar, sugar, ajinomoto and salt.
  • Boil for another five minutes.
  • Add corn flour to thicken chopsuey.
  • Heat oil in another pan and add all vegetables.
  • Sprinkle salt and fry for 10 minutes.
  • Mix chopsuey and vegetables.
  • Serve with boiled and fried egg noodles.
