Chef Amrita Raichand tells us how to make a healthy sandwich. You can share your recipes too!
A sandwich is easy to make and you can always play with the ingredients to make it as healthy as you can.
Here's the recipe:
Rainbow Sandwich

Ingredients
For green spread
- 1 medium bunch spinach (blanched and chopped)
- 1 1/2 tbsp mint chutney
- 3 tbsp mayonnaise
- Crushed black peppercorns
- Salt to taste
For red spread
- 2 medium beetroots (boiled and peeled)
- 2 tbsp tomato ketchup
- 2 tbsp mayonnaise
- Crushed black peppercorns
- Salt to taste
For yellow spread
- 1 cup corn kernels, (boiled and coarsely crushed)
- 2 tbsp mayonnaise
- 1 1/2 tsp mustard paste
Method
For green spread
- Combine spinach, mint chutney and mayonnaise in a bowl. Mix well.
- Add salt and crushed peppercorns and blend it.
For red spread
- Grate the boiled beetroot in another bowl.
- Add tomato ketchup and mix.
- Add salt and crushed peppercorns along with mayonnaise. Mix well.
For yellow spread
- Combine crushed corn kernels, mayonnaise and mustard paste in a separate bowl. Mix it well.
To assemble
- Spread some green chutney mix on a slice of bread and top it with another slice with the same spread.
- Now spread some red chutney over it and top with with another slice with the red chutney spread.
- Repeat the process with the yellow chutney spread.
- Top it with three more slices of bread (with different spreads).
- Prepare the remaining sandwiches in the same sequence.
- Trim the edges of the sandwiches using a serrated knife.
- Cut into triangles and serve.
