Rediff reader Priyanka Mukherjee sent us this easy-to-make recipe of Coconut Banana Malpua.
Malpua is a delicacy enjoyed all over India. Its a sweet made in different ways in different locations. My twist to the recipe is adding the flavours of coconut , banana, fennel and camphor together. What more this simple and easy to make recipe can be best enjoyed during the festive season," says Priyanka.
Ingredients
For the batter
- 2 small mashed bananas (I used malbhog)
- 1/4 cup grated fresh coconut
- 300 ml thickened milk (500ml milk reduced to 300ml)
- 1/2 tbsp crushed fennel seeds
- 1/2 cup maida
- 1/4 cup semolina
- 1/2 tsp camphor powder
For sugar syrup
- 1 cup water
- 1 cup sugar
- 2 to 3 whole green cardamoms
- 1/2 tsp camphor powder
Oil for deep frying
Method
- In a bowl, add all batter ingredients and mix well so that there are no lumps.
- Allow it to rest for two hours.
- In another pan, boil water, sugar, cardamom and camphor to make sugar syrup of single-thread consistency.
- In a frying pan, heat oil and pour a ladleful of the rested batter to form a 2.5" diameter malpua.
- Fry on medium heat. Let it cook on one side and then flip it over to cook the other side.
- When they turn brown on both sides, drain the malpuas.
- Immediately immerse in the sugar syrup and leave for around 30 seconds.
- Remove and garnish it with pistachios or almonds before serving.
