Eggie Baida Roti
Ingredients
- 1 maida roti thinly rolled
- 1 egg
- Vegetable oil as required
- 1 onion fine chopped
- 1 tomato fine chopped
- 1 tsp red chilli powder
- 1 tbsp garlic
- 1 tbsp onion
- 1/2 tsp cloves
- 1/2 tsp peppercorn
- 1/2 tsp ginger
- 1/2 tsp coriander
- 2 eggs beaten
- 1/2 tsp turmeric
- 1/2 tsp green chilli
- 1/2 tsp mint
- Salt as required
Method
- Put the maida roti on the tawa and cook it till it turns golden brown on both the sides.
- To make desi anda bhurji, heat oil in the pan. Add spices and cook it for a minute.
- Add tomato and onions. Cook them till translucent.
- Add turmeric and red chilli powder. Cook for a minute.
- Beat the eggs lightly and add salt to taste.
- Add the cooked mix to the eggs.
- After bhurji is ready, put it in the middle of the roti and break one egg on it.
- Fold the roti from all the sides and cook it properly until it is warm and crisp.
Classic Anda Bhurji
Ingredients
- 1 onion fine chopped
- 1 tomato fine chopped
- 1 tsp turmeric
- 1 tsp coriander powder
- 1/2 tsp pepper corn
- 1/2 tsp ginger
- 1/2 tsp coriander
- 2 eggs beaten
- 1 tsp green chilli
- 1 tsp mint
- 1 tsp red chilli powder
- Salt as required
- 1 tsp garlic
- Vegetable oil as required
Method
- Heat oil in the pan.
- Add the spices and slightly let it splutter.
- Add garlic, green chilli, onion and tomato and cook it nicely.
- Add turmeric powder, salt, red chilli powder, coriander powder and cook it.
- Once it is cooked, add the beaten eggs and scramble it.
- Garnish with coriander leaves and serve.
The Big Steak Omelet Meal
Ingredients
- 1 tsp vegetable oil
- 1 spring onion, sliced finely
- 1 medium red onion, chopped
- 1 to 2 green chillies, chopped fine
- 2 cloves garlic, finely chopped
- 1⁄4 tsp turmeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- 2 eggs, beaten
- 2 cups cheese
- 1 cup mushrooms, corn, peppers mix
- 2 tsp freshly chopped coriander
- Salt as required
Method
- Heat oil in frying pan.
- Fry the onion, chilli, ginger, garlic until translucent.
- Add turmeric and saute for a minute.
- Add other spices and cook for a few minutes.
- Take it off the flame.
- Beat the eggs lightly and add salt to taste.
- Add the cooked mix to the eggs.
- Saute mushroom, pepper mix, corn in butter differently. Add it on top of the omelette.
- Add it back to the pan while it is still greased with oil.
- Cook for a few minutes and then flip over after sprinkling some coriander on the first side.
Cordon Bleu Eggie Burger
Ingredients
- 1 burger bun
- 10 to 15 gm onion rings
- 2 eggs
- 1 cucumber
- 1 tbsp chipotle mayo
- 1 spring onion finely chopped
- 2 cloves garlic
- 1 tsp ginger finely chopped
- 1 tsp coriander leaves chopped
- 1-2 green chilli chopped
- 1 tsp ground coriander
- 1 tsp butter
- Vegetable oil as required
- 10 to 15 gm tomato
- 1 lettuce cup
- 3 to 4 sliced pieces gherkins
- 1 cheese slice
- 5 to 10 gm cucumber
- 2 tbsp southwest sauce
- 2 cheese slice
Method
- Heat oil in the frying pan.
- Fry onion, ginger, garlic and green chilli until onions turn translucent.
- Add turmeric and fry for a minute.
- Add remaining spices.
- Beat the eggs lightly and add salt to taste.
- Add the cooked mix to the eggs.
- Add processed cheese. Add some fresh coriander leaves.
- Heat the bun in the frying pan.
- Apply southwest sauce on half bun of the burger and cheese sauce on the other half.
- Place the lettuce cup on the base of the burger bun and add the veggies on top of it.
- Place half omelette on it and add the veggies on top of it.
- Place the other half add some more veggies.
- Apply a spoonful amount of sauce on it and place the cheese slice on it.
- Place head of the burger on it and serve.
Kolhapuri Anda Curry
Ingredients
For Kolhapuri masala
- 1 onion chopped
- 1 tomato chopped
- 1/2 tbsp ginger-garlic paste
- 1 green chili
- 2 dry red chilies
- 1/2 cup chopped coconut
- 1 tsp garam masala
- 1/2 tsp turmeric powder
- 1 tsp poppy seeds (khus khus)
- 1/2 tsp black peppercorns
- Salt to taste
- 1 tsp mustard seeds
For curry
- 4 eggs hard boiled (shell removed and slitted)
- 1 cup water
- 1 tbsp chopped coriander leaves
- Salt to taste
Method
- Heat 1 tbsp oil in a pan or kadhai.
- Temper mustard seeds, peppercorns, khus khus and dry chilies. Saute a while.
- Add chopped onion and green chili. Cook for a minute.
- Add chopped tomatoes and stir well.
- Add ginger-garlic paste and saute a while.
- Add chopped coconut, turmeric powder and garam masala.
- Stir well and cook for 5 minutes. Remove from heat and allow to cool.
- Blend the mixture in a mixer grinder or food processor to smooth paste.
- Add 1 or 2 tbsp water. Heat 2 tbsp oil in the same pan.
- Fry eggs and add ground masala paste.
- Adjust salt and add water.
- Mix well everything and cook for 10 to 15 minutes.
- Garnish with chopped coriander and serve hot with rice or roti.
